Madeira food pairings
My friend would like to do a tasting showcasing The Rare Wine Co. Historic Series - Charleston Sercial, Savannah Verdelho, Boston Bual, New York Malmsey. He asked me for some food pairings to go with these wines for an after dinner tasting. Could someone please suggest some food pairings for these wines? Thank you in advance!

Sercial and consommé works well. But perhaps something more substantial, like French onion soup.

Since they are for after dinner perhaps some small snacks like dried apricots, candied walnuts, aged hard cheese that's not to powerful.

Verdelho with fried foods. Chicken or fish. Boal with Goulash.

I am a big fan of Sercial, Terrantez and dry-side of Verdelho with Sushi and also fried chicken, (home cooked ... not KFC). Also in January, I grilled some London Broil using the first cut of the top round and it was fantastic with sauteed mushrooms w/ leftover RWC Bual.
