Opened 12 hours before service, then decanted about an hour ahead.

The nose was a combination of acetone and maple. The color was a shiny medium brown with the great green rim so indicative of Madeira.

On the palate, there's very high acidity with a Boal-level residual sweetness. If tasted blind, I would have guessed Boal. There was a lot of nuttiness.

This was paired with cheese because of the RS level. It went fabulously well with the cheeses, but would have paired well with a chicken cordon blue as well.

Fortunately, I have one more bottle!
