Pan Fried Almonds

Jay mentioned pan-fried almonds as a good accompaniment to a port. I had some of these on a couple of occasions last October and they were absolutely superb and very more-ish.

If anyone has a recipe for them, please tell. I would love to try some of these for myself and have now found a source for Quinta de Vargellas olive oil so I am all set to give it a go.

I'd rather follow a recipe than create one - can anyone help?

Alex,

You EU'ers are so lucky. I'm sure they would never export that oil to the US :cry:

But a recipe waould be great....those freshly cooked oiled and salted almonds were to die for.

Just to rub salt in the wound I also have a bottle of Vargellas Olive Oil and await the recipe. I will be sure to post a TN 8)

PS: I can't help think this going to go something like - put oil in a pan, heat, add salted almonds, fry, serve, eat :?

Yes, I'd say that that's about it. According to Miguel, you use a cast iron skillet, let the oil get really hot, and then pop in the nuts. It may help if the almonds and the oil both come from your own property, but can still work pretty well at home.

You can salt before cooking or after, both work pretty well although i think I prefer after.

Now all I have to do is to hunt down a source of fresh, unroasted, almonds from somewhere in the UK.

Can anyone suggest a place to try?

Harrods - if they don't have them, they will find them for you 8)

An alternative would be one of those freaky health food shops that only sell produce that isn't bad for you - I never go there :lol:
