Madeira: What is Your Balance of Acidity?

My preferred balance of acidity leans toward 'more lift' and thus, a higher than normal acidity; sizzling and cutting through a dense, rich finish. What about you?

I enjoy high acidity, especially in Madeira. But it's all a matter of balance. I've had some Sercial which had enough acid to eat through your skull! :shock: Too much of a good thing is still too much. :stir:
