recipe: Morangos em porto (strawberries in port)

Post by John F. Newman »

This morning I picked some strawberries from my garden, and last night I opened a bottle of 2006 LBV Quarles Harris. I just feel compelled to make "morangos em porto."

The recipe is simple enough; it has 3 basic ingredients: strawberries, port, and some sugar (the last ingredient is optional depending on the sweetness of the strawberries). Cut up strawberries and mix all ingredients together, let sit for several hours (or up to 24 hours refrigerated). Some recipes will have you reduce the port wine, I don't think it's necessary.

I will be serving this over a sponge cake, but it can be eaten with or without a cake accompaniment (over ice cream, or just eaten with a spoon). It can then be topped with some whipped cream.

I will probably pour my nightly port glass of the 2006 at the same time, and let it sit for my drinking pleasure tonight.

Sounds yummy. I will have to remember to try this.

As a side. I'm off to the store in a bit to get some Blue Moon beer to mix with Fonseca Bin 27. A birdy told me it's surprisingly good.

I'm not a big fan of whitbier, but can't say that I'm not interested. What is the mix ratio?

2/3 beer, 1/3 Bin 27

LOL, no tasting note per se. I can say it was like a slightly sweeter beer with a touch of fruit to it. That may sound bad but trust me it didn't come off that way...and I am someone who hates stuff like fruit Lambics, which are generally too sweet and cloying for me. The down side is there is a significant uptick in alcohol content so one must be careful not to drink it too fast. Not easy to do with a cold beer on a warm day. I'd have it again without hesitation.

Thanks for the err non TN.. sounds better than my experience with strawberries... inspired I grabbed some strawberries and a handy bottle of Dow 2006 LBV... my non-TN would be that I wasn't a great fan... Also poured a glass alongside/after the berry/port mixture and to my palate the berry mixture kinda picked up the worst of both worlds..the fruitiness of the berry was lessened and the acidity was highlighted. I would rather eat berries separately if mandated, but really would rather just have an extra glass of the port! :winepour:
