At-Home Evaporation! It Concentrates!

Post by Barry Sunderland »

So, I've been enjoying the '71 D'Oly Terrantez (Very, very good, just not 'great'). I left a thin layer of the Madeira in a decanter (about 1/4 of an ounce). Three days later, and I tasted it. The D'Oly had evaporated some and boy, did it concentrate the juice! Face-cringing acidity, intense sweetness, bold nut-skin...like Sercial meets Malmsey.

I will attempt to 'harvest' some more 3 day samples on the bottom of my decanter and collect them into a bottle.

Very interesting. Let us know if there's enough to get a good taste. Tough to get a good impression below a certain amount of juice though.
