Interesting read. In making beer we typically don't add any enzymes, but the mash process is all about setting the temperature of the grain and water to favor certain enzymes, be it to break down beta-glucans, proteins, or most importantly, carbohydrates into sugars. There is some work being done with enzyme additions to break down gluten, to make gluten free beer from barley.
