Pedro Ximenez 30 years old Sherry

Had our first foray into this style of wine tonight - Wow! Definitely going to have to explore these wines a bit more - this wine was absolutely killer with a chocolate mousse cake for dessert.

Actually, very little Pedro Ximenez is made nowadays in the Sherry region. The vast majority is from the neighboring area of Montilla, but the two areas are frequently confused and have been for a long time. Many producers have estates in both areas. The origin of the term Amontillado, a classic Sherry style, means "in the style of Montilla."
I love Sherry in addition to the Portuguese fortified wines. Quite different but very tasty to me. I even have a few long bottle aged versions.
