Those tasty things in Port

We all have certain likes and dislikes in life, the food we eat, the places we visit, and the Ports we drink. For example, I really like cigar, tobacco, and cedar notes in slightly older Ports. But I'm not real fond of having too much pine or resin notes in my Port.

I'm curious, what are the flavors in Port which you like and dislike most?

In newer ports I love the dark berry flavors--elder, blue, black, boysin etc. especially in a rich wine. I also seem to pick out rhubarb a lot--a flavor I love (just made rhubarb pie last weekend) and cherry.

In older ones I like the muted fruits and leather.

Most of the flavors I really like, but do not like too strong a raisin flavor.

Not a fan of pineapple or any really acidic fruit tastes.

Esteva and eucalyptus usually are turn offs for me in Port wine; but the latter more so than the former which at times, if minimal, can be intriguing. I really dislike TCA too. :mrgreen:

Apart from obvious flaws (TCA, VA, etc) the only taste that really turns me off Port is excessive sweetness. There have been a few Ports that I have tasted that leave the same after-taste as artificial sweeteners like saccharin or have a crystalline texture that is rather unpleasant.

Anything that tastes of a fruit is fine with me :wink:

I don't mind the mint/eucalyptus on its own, but it's usually accompanied by some (to me) jarring heat. I'm a wimp when it comes to the straight alcohol spice/heat, so too much of that is often a turnoff for me more than others.

Love--fresh fruits in younger versions and toffee in older versions.

Hate--high, out of balance alcohol or acid notes.

I typically enjoy the following flavors: floral notes, raspberries, blueberries, ripe plums and nutty undertones. I'm not a big fan of licorice, vanilla or (god forbid) coconut notes in my Port.
