Fonseca Gui Quinta de Panascal 1991

Post by Paul_B »

Tasted this lovely bottle last week,
Decanted and tasted in the following time line:
color indicates some room to age further!
First 15 min: very soft, mellow nice scent
pause
After 35 min: Big powerful "grip" wow, didn't expect that.
pause
after 1 hour continous drinking to the end...
back to mellow and balance, smooth is the word the others used the most.
A very nice evolution over a few hours.
Knowing what I know now would I open it again or let it age more? I think I would open it. Even if it could age further, it is already very very mellow so aging further might make it a very "shy", discrete or too subtle.

cheers
paba
