Jay mentioned pan-fried almonds as a good accompaniment to a port. I had some of these on a couple of occasions last October and they were absolutely superb and very more-ish.
If anyone has a recipe for them, please tell. I would love to try some of these for myself and have now found a source for Quinta de Vargellas olive oil so I am all set to give it a go.
I'd rather follow a recipe than create one - can anyone help?

But a recipe waould be great....those freshly cooked oiled and salted almonds were to die for.

Yes, I'd say that that's about it. According to Miguel, you use a cast iron skillet, let the oil get really hot, and then pop in the nuts. It may help if the almonds and the oil both come from your own property, but can still work pretty well at home.Derek Turnbull wrote:

You can salt before cooking or after, both work pretty well although i think I prefer after.
