I am not in Sommeliers tasting my wine. If I think it's off, I will let you know. How many of the those old bottles taste off initially then come around in a hour? Many... If they uncork the wine and are like "oh no", ok; then we will both take a sip. I'll offer the sommelier or waiter some later on if they are interested.

I don't mind a sip if it's something I've bought at the restaurant, though there are few restaurants that I've been to where I've trusted the somm/wine directors palate more than my own and would think it appropriate. I'm not ok with the pre serve sip with something I've brought. If you show interest, I'm happy to share as the meal winds down. It's not like you can run and replace it if it's off.

I don't mind, if it's a "real" sommelier. A taste should be only a few milliliters, so shouldn't affect my enjoyment. And, hopefully, the sommelier's judgment may be better than mine. It also may add to their knowledge base and increase their professionalism.

Though I reserve the right to say no and if they don't like it then I have no issues getting up, leaving, and taking my business elsewhere. I have long since passed the point of giving in to some people's entitlement mentality.
