Fascinating stuff. I do know that most firms with estufa are trying to reduce temperatures, but keep wines longer in their estufa. They're experimenting with different cycles of heating and cooling. Perhaps this research can optimize this. The mix with microoxygenation seems very, very interesting as well. I haven't been too happy with most estufagem wines, but the 3 year olds from Madeira Vintners showed real promise, IMHO.
