2005 Taylor Quinta de Vargellas Vintage Port

Decanted for about 11 1/2 hours. Very dark appearance. No translucence at all.

As I kept checking out the progress starting around hour 10 or so, the tannins still overwhelmed. Pucker up. The chocolate milk aroma filled up the room throughout the day. I love that.

The tannins are still quite present at 11 1/2 hours. Dark chocolate (Dylan's from NYC for this exercise) goes very well with this. I can imagine a chocolate raspberry torte or cherries dipped in chocolate (like you can find at Trader Joe's) would go great with this. Strawberry rhubarb, even.

Love it. I wonder what it will be like when it reaches adulthood.
