Paul Symington mentions, "I am delighted with the first few months since the Vinum has opened and have lunched and dined there many times with my family and friends. The food has exceeded my best expectations and I am also delighted with the atmosphere in the main dining room. We have been true to our objective of creating a totally authentic ambiance, respecting the great pine beams, the ancient iron pillars, the granite stone walls and above all the view into the cellars, from the tables, of 3,200 seasoned oak casks with some of our most valuable Ports slowly aging. Where else in the world is there a restaurant with such a view? On the other side, we have some lovely views of the river Douro, the ancient city of Porto and of course the historic Dom Luis bridge. The wine list has of course many of my family's Ports and DOC wines, but also offers many wines made by other producers in the Douro (and elsewhere), so I have been very pleased to see many of our friends in other wine companies coming to enjoy their own wines in Vinum. The team in the kitchen is led by Chef Celme (from Guimarães in the Minho) and offers really wonderful dishes all based on the best that Portugal has to offer, natural and authentic and they all match the wines and Ports of the Douro."
